CHEFS TAKEOVER

Olivier Le Calvez
Born in Mexico and trained in France under renowned chefs including Paul Bocuse and Joël Robuchon, Chef Olivier brings over 30 years of culinary expertise to W Toronto. His journey has taken him through prestigious kitchens in Paris, New York, Mexico City, and Lima before finding his home in Canada. In 2013, he opened El Catrin Destileria to critical acclaim, followed by Casa Madera at 1 Hotel Toronto, which quickly rose to the #1 spot on TripAdvisor. After launching Abrielle Mediterranean Restaurant at Sutton Place Hotel in 2023, Chef Olivier joined W Hotel Toronto in 2024, where he infuses his vibrant personality into every dish.

Jose Matamoros
Chef Jose brings 12 years of culinary excellence spanning from his birthplace of Chihuahua, Mexico to Toronto, where he's called home since 2006. His impressive background includes training at two-Michelin-star La Grenouillère in France and working alongside culinary legend Jonathan Waxman at Jams in NYC. Chef Jose has been instrumental in launching acclaimed restaurants across North America and Europe, including 1Hotel Toronto where he elevated the restaurant's TripAdvisor ranking from #445 to #4. His cooking style weaves together Mexican, French, Japanese, and Middle Eastern influences, resulting in bold flavour combinations and refined presentations. Beyond his kitchen duties, Chef Jose shares his knowledge through virtual workshops focused on Mexican techniques and sustainable cooking practices.

Viridiana Cano
Born in Hidalgo and raised in the coastal city of Tampico, Mexico, Chef Viridiana's culinary perspective is deeply influenced by the seafood traditions of her hometown. After graduating with a Psychology degree in 2014, her path took an unexpected turn when she moved to Toronto in 2016 and began working as a dishwasher at Bloom Restaurant. Through determination and natural talent, she rose to lead the kitchen in just two years. In 2020, Chef Viridiana launched Puerto Bravo, a seafood-focused restaurant that serves as both a tribute to Tampico and an introduction of those flavours to Toronto diners. Her commitment to authenticity and quality has earned Puerto Bravo a Michelin Guide Bib Gourmand award for three consecutive years since 2022. When not in the kitchen, she pursues her passion for food writing, exploring the cultural and personal connections that transform dining into a meaningful experience.

Horacio Aguilar
With over a decade of experience spanning family-run venues to luxury hotels, Horacio blends his Mexican heritage with contemporary techniques to create cocktails that tell a story. Born and raised in Mexico before making Canada his home, he approaches each creation with thoughtful precision, balancing traditional flavours with innovative twists. His expertise across diverse hospitality settings has refined his ability to craft memorable drinking experiences that complement Chef Olivier's culinary vision. Horacio's passion for quality ingredients and cultural authenticity shines through in every carefully crafted pour, making him an integral part of W Toronto's beverage program.

Erick Lerch
With over a decade in the hospitality industry, Erick brings global perspective to his cocktail creations. Originally from Queretaro, Mexico, and now calling Canada home for the past two years, his approach is influenced by his time living and working across England, USA, Thailand, and Cambodia. This international experience, combined with his background in Mechatronic Engineering, gives Erick a unique precision and creativity behind the bar. As Bar Manager at Mother Cocktail Bar in Toronto, he crafts drinks that harmonize technical expertise with cultural storytelling, making him a perfect addition to this celebration of Mexican flavours and traditions.
